For 30 to 35 numbers
- Maida :2 glass (To make 13 dosas)
- Egg: 10 nos
- Sugar : 250 gm
- Ghee: 100 gm
- Milk : 1 glass
- Cardamom powder: 3 to 4 nos
- Poppy seeds : 50 gm
- Cashew nuts, Raisin(Kismis) : 50 gm each
- Oil -For deep fry
In a bowl add the flour/maida, 2 tbs oil & and 1/2 salt.Mix it well using water (sprinkle water in small quantity). Make a soft,non-sticky dough. Keep it aside for minimum 30 minutes.
Then make small sized balls using dough.
Take each dough ball, roll out the ball into thin round shapes ,like chapatis.
Make 13 pathiris with this dough.
In a pan( non stick pan) add some ghee, spread it all over the pan.
Once get hot, cook the pathiris. Cook both sides.
Either roast cashews and raisins in ghee or use it as raw. Clean the poppy seeds in water and roast it in ghee.
In a bowl break 5 eggs, and beat it using a spoon. Into this add required sugar ( 5 to 10 tbs) based on your level. Then add 2 pinch of cardamom powder , cashews and raisins. mix it well.
Pour 2 tbs of ghee to the pan and add the egg mixture into it. Stir it continuously for 2 to 3 minutes and scramble the eggs while cooking. once eggs cooked off the flame and keep it aside.
Then break remaining 5 eggs and mix with required sugar. Add 2 pinch cardamom powder and keep it aside.
Into milk add 2 to 3 tbs of sugar and mix well. Keep it aside.
In a heavy bottom pan pour ghee once get heated.
Take one pathiri that we have prepared early , dip into the milk mixture after that dip in egg mixture. Then place into the pan press with hand on this pathiri.
Above this add 2 to 3 tbs of scrambled egg mixture,1/2 tbs of poppy seeds, 1 tbs of ghee and 1 tbs of sugar. spread it on pathiri.
Then place next pathiri above this mixture after dipped in milk and egg mixture .Press with hand.
Above this add scrambled egg mixture as before and place another pathiri above this.
Like this make all 13 pathiris layer.
Press all together well with hand.
On the top pour remaing egg-sugar mixture and some poppy seeds.
Close the pan with lid and cook for 15 to 20 minutes in low flame.
Then open the lid and place the pathiri into a plate.
Then cook the other side (top side) by placing it to the pan once again in such a way that earlier top side on bottom of the pan.
Cook this side for another 15 to 20 minutes.
Use a toothpick to check the consistency .Then off the flame and Serve hot or use once cooled.
