Elanchi is a very easy and tasty snack .
- Maida :1 glass
- Grated coconut : 1 coconut
- Egg :2 nos (optional)
- Sugar : 4 to 5 tbs
- Cardamom : 2 or 3 nos, crushed
- Cashews and raisins : as needed
- Oil or ghee : As needed
- Salt : As needed
Pour 1 glass water(required water to make a loose consistency) , 1 tbs sugar and 1/2 tbs of salt into maida flour. Mix well and make dosa batter consistency .
Dosa preparation :
In a dosa pan( non stick pan) add some ghee, spread it all over the pan.
Once get hot, pour 1 ladle of batter into the pan and spread it in round shape. Cook both sides well.
In a bowl break and pour 2 eggs and whisk well.
In a pan add 2 tbs of ghee . Saute Grated coconut . No need to cook until turn its color. Just need sauteing in ghee. After 1 to 2 minutes pour egg mixture. Mix well until egg cooked well. Add 4 to 5 tbs of sugar, crushed cardamom powder, cashews and raisins. Mix well and off the flame.
In each dosa place 2 or 3 tbs of filling and roll it.
Delicious elanchi ready to serve.
