In a bowl add the flour/atta, maida, 3 tbs oil & salt.Mix it well using water (sprinkle water in small quantity). Make a soft,non-sticky dough. Keep it aside for minimum 30 minutes.
Then make small sized balls using dough.
Take each dough ball, roll out the ball into round shape , a small plate size. Here we completed the preparation of “pathiri”.
Boil the chicken with 1/2 tbs of salt and cook well. Remove the bones and take the flush. In a mixer crush the chicken and keep aside.
Heat oil in a pan. Fry ginger, garlic, and green chilies. Then add chopped onion. Saute the onions till it become translucent. Add crushed chicken and stir it well. Then add turmeric powder, red chili powder garam masala and 1/2 to 3/4 tbs salt. Saute it well until all ingredients mix well. Then off the flame.
In prepared pathiri place 2 tbs of chicken filling and place another pathiri over it. Press both pathiris through the edge. You can use a spoon or fork to press the sides in round shape. So you will get a beautiful design on the outer side.
Fill all pathiris like this.
In a pan Heat the oil for deep fry. Then deep fry the pathiris in oil.
In bowl beat 2 eggs with 1/2 tbs of sugar.
In a pan add 1 tbs of oil.
Take each fried pathiris and dip into this egg mixture. Place this pathiri in hot pan and cook both sides quickly.
