Oven baked tandoori chicken and rice

Ingredients :

For marinating the chicken :

  • Whole Chicken
  • Yogurt : 1/2 cup
  • Tandoori Masala mix : 1 packet
  • Ginger-garlic paste : 1 tbs

For the Rice

  • 2 cup uncooked long grain rice
  • 1 onion chopped finely
  • 2 carrots chopped
  • 2 clove garlic chopped
  • salt as required
  • 2 and 1/2 cups chicken broth
  • Water : based on type of rice,( if more water required than chicken broth)

Preparation

  • Marinate chicken for 12 hours
  • Preheat oven to 350 degree Fahrenheit
  • Grease a baking dish
  • You can saute the onion or raw onion to the rice
  • place the chicken on the center of the dish
  • Tie up the legs
  • Add washed and drained rice on both sides of chicken
  • Add all other ingredients to the dish and cover with a aluminum foil
  • Bake for  hour, or cook until chicken and rice cook well
  • Let it sit covered for 15 more minutes
  • In between flip the chicken to make sure both sides are cooked evenly.
  • Serve hot
