Special Brinjal Fry
Ingredients:
  • Brinjal : 2 medium sized
  • Red chili powder :1 tbs
  • Turmeric powder :1/2 tbs
  • Coriander powder: 1 tbs
  • Cornflour :2 to 3 tbs
  • Sambar powder : 1 tbs (optional, for masala taste and good aroma)
  • Salt: as required
  • Oil :
Preparation:

Clean the brinjal and cut into equal sized pieces.

In a bowl add brinjal pieces 1 tbs of salt, 1 tbs red chili powder, 1/2 tbs of turmeric powder, and 2 to 3 tbs of Cornflour into it. Marinate the brinjal pieces with ingredients and keep aside for 20 to 30 minutes. You can optionally use sambar powder into this. If  required add 1 to 2 tbs of water.

Then deep fry the brinjal pieces in oil.

Simple tasty Brinjal fry ready. It will be crispy
