In Kerala vegetable stew widely known as “ishtu” curry. Its a curry preparing from potatoes and coconut milk.
- Potatoes: 3 medium sized (cut into medium sized square pieces)
- Onion: 2 nos( Chop into small size)
- Green chilies: 4 or 5( Split into two)
- Ginger: a small pieces, chop into pieces
- Coconut : 1 coconut grated
- coconut oil: as needed
- Salt: as needed
- Mustard seeds : 1 tbs
- Coriander leaves : 2 or 3 finely chopped
- Water: as required
Making coconut milk:
Mix the grated coconut and water( 1 glass water) in a mixer, Filter the milk from the coconut and set aside.
In pressure cooker cook the potato pieces, garlic pieces, green chilies , curry leaves ,chopped onion, add salt. Mix it well. Cook until 3 whistles. Then off the flame and allow to cool.
Then open the lid and mash all together little bit.
On the flame and cook the mixture again, Then add coconuts’s milk into it. Once it is joined with potato mixture, then immediately off the flame. no need to cook more. Just need to get heated the coconut milk.
Add coriander leaves and mix it well.
In a pan add 2 table spoon of oil , splutter mustard seeds and curry leaves. Pour this into the curry.
Please note that no need to use mustard seeds if you not preferring, just add 2 tbs of coconut oil into the curry as last step.
Tasty potato stew ready. Serve with chapathi, pathiri, appam, putt etc…
