- Brinjal : 2 medium sized
- Red chili powder :1 tbs
- Turmeric powder :1/2 tbs
- Coriander powder: 1 tbs
- Cornflour :2 to 3 tbs
- Sambar powder : 1 tbs (optional, for masala taste and good aroma)
- Salt: as required
- Oil :
Clean the brinjal and cut into equal sized pieces.
In a bowl add brinjal pieces 1 tbs of salt, 1 tbs red chili powder, 1/2 tbs of turmeric powder, and 2 to 3 tbs of Cornflour into it. Marinate the brinjal pieces with ingredients and keep aside for 20 to 30 minutes. You can optionally use sambar powder into this. If required add 1 to 2 tbs of water.
Then deep fry the brinjal pieces in oil.
